Christmas Eve is tonight for some people. My husband is Ukrainian and we will be celebrating this evening with a very traditional, yummy, mostly vegetarian meal.
Borscht, perogies and cabbage rolls will be featured on the menu.
There is a lot of symbolism and religion behind the meal, but you don't have to be Ukrainian, or Orthodox, to enjoy the foods. With that in mind, I offer this recipe for holubchi and my blessings for those among you who celebrate today and tomorrow.
