Rigatoni Recipe

I have a tiny vegetable garden, all that the limited sunlight will allow.

It's been a good year for tomatoes and peppers, though the peppers were tiny.
Faced with a heavy crop (for my smidgy yard) of tomatoes and a spare eggplant in my fridge, I went hunting for a yummy recipe.
I found this one for rigatoni with eggplant, peppers and tomatoes.
It's fantastic!
